What is an elixir bar?
As someone who once led a nomadic life, I traveled across the United States, seeking out elixir bars and apothecaries wherever I could. I loved discovering public spaces that offered more than just coffee or traditional bar drinks. Instead, I found places that served herbal beverages and ingredients with health benefits that were as delicious as they were purposeful. With over 20 years in the traditional bar industry, I’ve constantly searched for unique ingredients, pushing the boundaries of classic cocktails. During this time, I also spent years sober for personal and health reasons, which deepened my appreciation for alternative, alcohol-free beverages.
At Honey, “elixir bar” serves as an umbrella term for what we offer: we’re more than just a bar. Our menu spans apothecary-inspired cocktails, non-alcoholic potions, ceremonial cacao, jun, wine, beer, and a welcoming vibe.
Sourcing high-quality spirits, organic herbs and botanicals, local honey, direct-trade cacao, and products from small-batch brewers and artisans is essential to us. Each ingredient is selected with care and intention, ensuring that every elixir is genuinely magical.
Our cocktail philosophy? Respect the classics—but add a “Honey” twist. We ask ourselves: how can we reinvent a classic recipe by incorporating honey or apothecary herbs? Our back bar isn’t only stocked with premium spirits; it’s also filled with apothecary jars of herbs, flowers, roots, and mushrooms, bringing a botanical element to every drink.
Our non-alcoholic (N/A) potions are more than mocktails. Each is an intentionally crafted beverage, not just an NA spirit in a traditional recipe. We create NA drinks to evoke a thought, feeling, or experience. Every aspect—the glass, the color, the ingredients, and the name—contributes to the concept. To us, an NA drink should be just as complex and satisfying as any traditional cocktail.
We also serve ceremonial-grade cacao, or sipping chocolate. Our Guatemalan cacao comes directly from Ruk’u’x’Ulew Cacao, a Mayan women’s collective on the shores of Lake Atitlán, and our Peruvian cacao is sustainably sourced from the Peruvian rainforest.
Jun is another specialty—a rare, fermented herbal beverage brewed locally in Boulder, CO. Infused with medicinal herbs, superfoods, botanicals, and secret ingredients, every glass of Jun offers an energetic shift from the first sip. Our goal is to provide an elixir for every type of drinker. Come try something new!
